A Little Something for the Belly




Saw this recipe and had to post it, heading to the store for cream cheese ....lol


Well, did it here is what we ended up with. Made a pretty good snack for a Saturday night.

OK, since this is a foodie post I will include the Egg Muffins I made for Sharon, a breakfast grab and go on the mornings she doesn't eat at home.
Got the idea off Pinterest (where else). It is not brain surgery. Basically, saute onions, shallots, orange and yellow peppers. Brown and crumble sausage, whisk the eggs ( I use Duck eggs, thanks, Ka-ron*). I put the sausage and vegetables(also diced Jalapenos not sauteed) in the muffin tin then filled each with the eggs. Bake it, cool it, freeze it, and bag it, ready to go.



Have not tried any of the muffins but the omelet made from the left over stuff was great.

* Kar-on is our friend who has a mini farm, She has ducks, chickens, horses and a pig. She is gracious enough to keep us supplied with the eggs and we really appreciate them, and her.
